Definitions
Data Controller:
APOLKA Restaurant, Súkennícka 4, 821 09 Bratislava (hereinafter referred to as the “Restaurant”)
Customer:
A natural or legal person using the services of the operator

Regulation (EU) 2016/679 of the European Parliament and of the Council of 27 April 2016 (General Data Protection Regulation – GDPR) and Act No. 18/2018 Coll. on Personal Data Protection
GENERAL PROVISIONS
The purpose of these terms is to ensure the processing of personal data of customers obtained within the business activities of the Restaurant, as well as to define obligations regarding confidentiality of such information, under the conditions set out herein.
The Restaurant undertakes to process personal data in accordance with applicable legal regulations, in particular GDPR and Act No. 18/2018 Coll.
RIGHTS, OBLIGATIONS AND CONFIDENTIALITY
The Restaurant undertakes to implement all necessary technical, organizational, and personnel measures to protect personal data against unauthorized or accidental access, alteration, destruction, loss, unauthorized transfer, or misuse.
Personal data are processed by:
- restaurant staff
- restaurant manager
- accountant
- service personnel
All authorized persons have been instructed on the confidentiality and sensitivity of personal data and handle them exclusively within the scope of services provided by the Restaurant.
The Restaurant does not sell or provide personal data to third parties. However, personal data may be processed by:
- Bookio reservation system
- EkonexGroup accounting company
The conditions for data processing are governed by data processing agreements with these processors.
CUSTOMER INFORMATION
The Restaurant is legally obliged to store certain personal data of its customers, including:
- name and surname
- date of birth
- address
- duration of stay
- ID document number and type
- visa (if applicable)
- purpose of stay
This obligation arises from Slovak legislation, particularly Act No. 404/2011 Coll. on the Residence of Foreigners and Act No. 582/2004 Coll. on Local Taxes.
Personal data must be retained for a period of 6 years.
Customers have the right to request access to their personal data at any time. These data are stored in:
- customer profiles in the reservation system
- loyalty program records
Printed records are stored in secured, locked premises.
In case of a request for erasure, the Restaurant will delete the customer profile and destroy physical records; however, data may only be deleted after the legally required retention period has expired.
TECHNICAL AND ORGANIZATIONAL SECURITY MEASURES
The Restaurant ensures that personal data are protected against unauthorized access, alteration, loss, or misuse.
In particular:
- access is granted only to authorized persons with unique credentials
- data are processed only within secured premises
- measures are in place to prevent unauthorized copying, transfer, or deletion
- all data operations can be traced and verified
The Restaurant ensures, through internal policies and contractual arrangements, that employees and other authorized persons process personal data only within defined conditions and instructions.
All such persons are bound by confidentiality obligations, even after termination of employment or cooperation.
CCTV SYSTEM
The Restaurant uses a CCTV system for the purpose of protecting customers, staff, and property.
Recorded footage:
- is not actively processed
- is not provided to third parties
